This skinny coconut daiquiri is creamy and full of coconut flavor, but much lighter than most frozen coconut cream cocktails. Only has 175 calories and 5 grams of sugar.
I fell in love with coconut daiquiris on our honeymoon. We were in St. Croix and I became the resident mixologist. There was a blender in our villa so just about every morning I would wake up and make a new concoction. That feels like a lifetime ago, but coconut daiquiris will always bring me back to that fun time in our lives!

I remember groceries were super expensive on the island, but I did grab a container of unsweetened vanilla almond milk. It’s my go-to milk for overnight oats and smoothies but it also came in handy for cocktail making!
Skinny Coconut Daiquiri Ingredients
- almond milk โ to make this daiquiri lighter in calories and lower in sugar, we’re using unsweetened vanilla almond milk, but feel free to use whatever dairy-free or dairy milk you have on hand.
- unsweetened coconut cream โ adding a bit of coconut cream gives the drink a creamy, rich texture that frozen coconut drinks are known for.
- frozen banana โ the frozen banana chunks help make the daiquiri thick and creamy and gives it a hint of sweetness, without making it taste too banana-y.
- lime juice โ all daiquiris need a little lime juice, literally the definition of a daiquiri is a cocktail made with rum and lime juice.
- lime zest โ the zest adds more lime flavor and pop of color when sprinkled on top of the daiquiri.
- fresh coconut meat โ shredded unsweetened coconut works too.
- coconut rum โ you can use coconut water instead of rum for a mocktail version of this cocktail
How to Make “Healthier” Cocktails
Most of the coconut-based cocktails made at the restaurants/bars are made with canned Coco Lopez Cream of Coconut. This is coconut cream that is sweetened with sugar. Ready for the nutrition stats on a 2 tablespoon serving?! 130 calories and 20 grams of sugar. Don’t get me wrong… restaurant frozen drinks are delicious, but there are definitely ways to make a creamy, delicious cocktail but with less calories and sugar.
I didn’t want to completely omit the coconut cream from my version, but I cut back the quantity quite a bit and used a version without added sugar. Using a base of unsweetened almond milk keeps the drink creamy, but keeps the sugar and calories lower. I also decided to throw in a frozen banana for extra sweetness and texture as well as fresh coconut meat and coconut rum for the coconut flavor.
Coconut Daiquiri Mocktail
To make a non-alcoholic version of this coconut daiquiri, simply swap out the rum for coconut water. I honestly love the mocktail version!

Skinny Coconut Daiquiri
Ingredients
- 1 1/2 cups unsweetened vanilla almond milk*
- 1/2 cup coconut cream
- 1 medium frozen banana, chopped into chunks before freezing
- 2 teaspoons lime juice
- 1/2 teaspoon lime zest
- 1/4 cup chunks of fresh coconut meat, shredded unsweetened coconut works too
- 1/2 cup 4 oz coconut rum*
Instructions
- Place all ingredients in a high powered blender and blend until smooth. Pour into four glasses and enjoy!
Notes
- Feel free to swap out the unsweetened vanilla almond milk with another milk of choice.
- Use 1/2 cup coconut water instead of coconut rum for the mocktail version.

This drink was delicious!!!! I prepped this using some vanilla protein powder as well and will have it for breakfast tomorrow!!! I definitely want to try this using rum for this coming 4th of July weekend!!! Super yummy without feeling a sugar crash later!
