I like the taste of these, but even with using a plant based protein powder there is way too much liquid. I would reduce it to at least 3/4 cup if not 1/2 cup like the traditional ratio.

Hey Lucy – I haven’t tried it, so I’m not sure how the brownies would turn out using swerve instead of maple syrup since it would be a different type of sugar. If you want a low-calorie sweetener option I would suggest using Monkfruit maple syrup since it’s a liquid form of sweetener and can be used 1:1 with the maple syrup. Let me know what you end up trying and how the brownies turn out!

Hi Lauren – Are you looking for more or less strawberry flavor? If you reduce the strawberry puree that will throw off the liquid to dry ingredient ratio, so if you did that you’d probably need to substitute it with some more liquid. Let me know if you try it and how the cake turns out.

Hi Kristie – Sorry for the confusion. The recipe is so you can make one of the four flavor variations. So if you want the chocolate chip variation you’d just add the 2 Tablespoons peanut butter, mashed bananas and mini chocolate chips to the batter. These were delicious. I was worried they wouldn’t turn out because I didn’t have a silicone baking pan or silicone muffin liners. I used my pampered chef stoneware muffin pan and sprayed it with cooking spray. The muffins popped out of the pan as soon as I tipped it over with nothing stuck. Thank you for sharing this recipe.

I used a large head of cauliflower and Β½ cup of olive oil, which is double the amount recommended. I did use the same amount of all the spices, and it turned out very spicy! It’s delicious, but if you’re feeding it to kids you would want to tone down the heat a lot.
